Beef Wellington - Copper Pot Style!

So the family has been driven to try a Beef Wellington since our trip to Hell Kitchen so this weekend we decided to attempt it since we just got the Hells Kitchen recipe book. The biggest challenge is we don’t have a working oven at the moment.......so what to do......well cooks used fire in the old days to create magical meals so we decided that the copper pot would be up to the task!!!

So we started with some nice filet loin

the loin was sized and seasoned in prep of the sear. The sear will be done over cherry wood.

once the filet has cooled it is wrapped in the mushroom duxelles and prosciutto

they will be Joined with baby carrots and pearls. They were blanched for 4 min in seasoned water and then butter seared.

All I have to say is I hand it to my family for all the helping hands with this one. It was two full days of effort but I can say every minute was worth it. And it also shows that a RF smoker is MORE than just a low and slow tool. It has endless abilities to create goodness!

Thanks! I made scratch brown chicken stock for the blackberry reduction because we wanted to follow all of Gordon’s steps. It reminded me of thanks giving!

Thanks MJB! I studied Gordon’s steps for hours and wrote a time table out and went over it many many times.....that was some coin I didn’t want to mess up!
It was the very tasty! The blackberry reduction puts it over the top!

Thanks jcam! I now know why the contestants are supper stressed on the show when they do the welly! There are sooooooo many steps it’s easy to forget one!

What was in the Duxelle? I've not seen one that dark color. Looks rich and flavoursome...JJ

Thanks JJ! Oh man I’ve done 300 steaks but 300 welly that would make for a long long day!!!

The Duxelle is just baby Bella’s and some shallots, s&p, butter

It went nice and dark and rich when I sautéed it. GR recipe called for 15-20min worth. It was crazy good stuff all by it’s self!

300 Wellingtons... As in individual serving size? No thanks.

the Hells Kitchen in Vegas did a steak size welly. After doing the bigger I actually think it would be easier to do that than the roll. Next time I’m going to try that.

I love that cookbook already...that's an awesome looking meal! I have to say I still love the fire pics (couldn't leave that out) but the meal itself is out of the park! Glad chef jimmyj chef jimmyj asked about the duxelle cuz I didn't know what it was. All I can add is if you and chilerelleno chilerelleno ever have a cook off can i be invited? I would leave stuffed, impressed, and smiling from ear to ear!
