Thanks sandy! Necessity has a way of forcing one out of their comfort zone in a good way! Our replacement oven finally arrived so it will be in place over the weekend so back to reality....LOL

Geez man that is just outstanding. Don't think Ramsay would have yelled at you for that one! Wife and I love that show always wondered exactly how the wellington was made and you cleared it up! Carousel worthy IMO. LIKE

Thanks SVOLfan! Ramsay has changed things up on his recipe I used from his cook book. I think it makes it a bit easier and less prone to issues. It takes time to put together but once put together the cook is the simple part. I also noticed that its important to get it wrapped really tight and letting it refrigerator it in between the each wrap (you can't rush it). Next time we do it I think I will do it the night before or early morning before the cook. That way its just sides to worry about....
