Had a bunch of shrooms to cook up and the wife suggested stuffing them to go with the rack of beef ribs…..
So first up the shrooms….popping the stems and getting them ready to stuff…
Chopped up the stems, onion and shallots, then in a pan with white wine in the pan that seared up some spicy sausage.
Added a bunch of fresh chopped herbs in as well….
Next the veg/herb mix were mixed in with some crème cheese, graded parm, & the sausage and then the caps got stuffed and topped with buttered bread crumbs….
Bingo the beef ribs after the usual 3 hours at 265…..
Oh and my wife’s chicken for the week too…..bonus cook!
Ramped up the RT 1250 to 350 for the shrooms!
