Well, My wife got some BBR's for the 4th so I'll do the 3-2-1 method. But I saw some beef ribs at the Super WM mixed in with the briskets. On the beef ribs, can they be cooked using the same method? This will be my first attempt using my new smoker/grill "Black Beauty."

You can do the 3-2-1 method if you want to. I have done them both ways. When done without the foil, I find them to have a little more "texture" or "bite" to them. With foil, they will literally fall off the bone. Beefies have a lot more fat in them than spares or BBs, so by slow and low, will make them very moist.

Good luck in your endeavors and take pics!

Are they the "dinosaur bones" or the short ribs? I've done the long ribs a couple of times and they were excellent...I didn't foil, opened up the smoker (little electric) and I had an inferno in there, so when they say they are fattier than pork, believe them!!!

Hmm, I don't know, the beef ribs seemed small, but I'll have to check. The porks are BBR.
