Absolutely one of my favorite meals. Mrs BD and I take our round bone seriously. I always order it when traveling just to make sure we do it right.

I wasn't gonna suggest some thing bad ;) It is as I said, a very underappreciated dish. It's some thing I want to try when doing a brisket or some thing. Start it in the AM, you know it'll be good by dinner.

How much of the smoke flavour was revealed by the by? I'm just curious with all that braising flavour profile if the smoke came through.

Smoke definitely came through - I wouldn't use a heavy wood on this one, the smoke flavor was about right with Pecan and Cherry.
 
Righto; I don't like heavy smoke flavours like mesquite much, so I'd probs run this with Cherry and Hickory.

I'm jealous Chile. I checked prices on shank, running high right now at the sole place I saw them. Likely gonna snag up a pork butt..freezer down to 1 bag of Kalua Pork now. Figured I'd hammer that out some time mid next week.

We are starting a trend Briggy ;)

OK, I'm inspired again, have been meaning to make my first Osso Bucco for awhile.
I pulled out a vacbag of Venison shanks from earlier this year,
Gonna make either tomorrow or Sunday.
