Thanks C M you are right, as soon as I my pork loin is finished curing and smoked, I start another batch of sausage. Probably go get me a couple of butts, grind my own maybe try hot links ?
Way to go Gary! Great first sausage. It really helps to have two sets of hands. Hey if you happen to have a lazy susan laying around somewhere it really makes it even easier, as it kind of coils the sausage right up for you. Just a thought and POINTS.

there are alot of great recipies on here. my problem is i love making the sausage.. fresh or smoked and can no way eat it all... i have a lot of "pet vultures" that come and grab up my stuff.... only had 1 critique and i guess that bugger makes his own now ... HA HA HA
best thing about sausage making is ya can eat your mistakes!!!
