Beef Center Back Ribs?

I was just at Walmart and they have some beef center back ribs for a really good price and I'm thinking about giving them a try this weekend (a long with a slab of pork St. Luis style spare ribs and possibly a rack of babyback's).

Any suggestions on temps/times for the beef center back ribs? I've never tried these before.

I will be cooking on my Pit Boss Pro Series 1100 pellet grill.
 
When I've done back ribs, they run about the same as spares or beef short ribs, about 6hrs. Be mindfull of how much meat are on them, if they are really thin they can dry, you may want to wrap or pan part way through.

I was going to do the St. Luis spare ribs on the 3 2 1 method. Would that work well for the beef center back ribs too?

I haven't done them like that but it should work, I'd throw some beef stock or beer in the foil pack. I've either done them naked the whole time or finished braising in a pan with liquid and some veggies for nice jus.
 
I've had really good results cooking from 275 to 350. I cook them hot with a generous coat of rub and get them to a temp of 190 to 210 seems to work well. I usually run a Hickory pellet for beef ribs.
 
If those are the cryo vac'd double pack @ walmart are the ones you're talking about, they are junk. They're what's leftover after rib roasts get cut off and theres nothing left worth spending your money on. You're paying for almost all bone.

Just don't want to see you waste your money like I did years ago :-)
 
I agree with fivetricks, you don't get any meat on them, if they are the cryovaced ones at WM.
Better to go to a butcher, or buy a Prime rib roast & cut the bones off yourself, leaving a lot of meat on them.
