Took some beef back ribs out of the freezer yesterday to throw on the smoker today. To prepare, I took them out of the fridge around noon and rubbed them down with some EVOO and a generous coating of beef rub. Then I let them sit out for an hour before putting them in the smoker. Held them at 225-235 for about two hours before taking them off for foil. I brushed a very light coating of BBQ sauce just for fun and threw them back on for 1.5 hrs at 225-235. Then, to crisp them up, I took them out of the foil and back on at 225-235 for another half hour or so. They rested for 10 minutes and that's about it. No complaints!
 
They look good from here.
