I had made these last week and really was not planning on posting here but I just finished them off and man where these good. Ribs where from couple Rib Roasts from Christmas. Picked Short Ribs up for 50% off sometime last year. I have not had any brisket this year and was really wanting some smoked beef. First time using meat church seasoning. I been salt sensitive lately so went light on it. Really could of used more. Did low smoke for 1.5 hours than 275 for 2.5 hours. Wrap back ribs in foil. Last time I did short ribs they where tough so I decided to put them in a foil covered pan with a cup of beef broth. Finished in the MES at 275 for another 2 hours. Let rest for couple hours. Served with some pan fried okra and corn. Split meat on plate to see color. Gave half to a friend now I wish I would of kept it.
