Thawed out a small piece that I cut back in May,part point and flat

WSM 18.5 holding steady 226* F


I attached 3 latches to hold the bottom when moving


Decided to do a small rack of ribs in the Kettle also

I wanted to keep the ribs standing in the rack, LOL so I used the Rotti Ring


Wind is blowing now having some trouble keeping the temp down on the kettle

HC Thanks well the kettle ran hot but that worked,ribs finished to an IT of 200* F ( Thanks Al for that post)

Brisket just got foiled upped the temp to 260 in the pit.

Update Brisket is in the oven 

Ribs should be FOB tender almost broke when I pulled them off the rack


Brisket is at 160* now

Everything looks great Richie! I like the idea of using the rotisserie ring to give you a little more space in the kettle!
