Had some back in the ‘70s when I had the chance to live in South Africa for a while. Sort of bland and stringy, but tender, had a fair amount of neutral fat, and not in any way offensive. I would bet a guy could smoke the heck out of one.
On the other hand, all of this hand wringing about what to do with the Columbian hippos is just stupid. They weren’t from there, and they’re not a benign species for a fragile ecosystem, so an appropriate euthenisation seems the best course.

I wasn't going to go there but my thoughts are the same.
Inbred herd so not viable to release back to the wild.
They're more threatening than a threatened species at this point.

Just turn 4 coonasses loose....problem solved! LOL!!
Turn a lot more meat eaters loose. At up to 3 ton an animal there is a lot to go around.

In the 3 years after Katrina I spent about 8 months in Louisiana. First New Orleans, then Baton Rogue, and lastly Covington. If the weather wasn't so rotten in Summer I would have moved there.

Every place I went the people were incredible, and man did I eat good. When you got back into the Bayou there was always some kind of feast going on and we got invited in every time.
