I fired up the mes today for 3 racks of baby back ribs. My wife was having some teacher friends over for a farewell for one of them leaving. Turned out pretty good, some were more tender than others and could do a clean pull, others had a good bite but not 100% clean. I put the bigger half’s towards the bottom rack and the smaller ones on top. Guessing maybe it was a specific rack that needed a bit longer.

I use a tooth pick to determine when done. May help next time. When it slides in with ease it’s done

The ribs at the bottom of the pic don't seem to have as much pullback exposing the bones. They probably could have gone longer. Nice job though!

You referring to the finished pic on my counter? I was surprised myself cause after I sauced them ther went back in for another 45min. They were in my smoker for almost 6hrs with my mes at 240 and even wrapped in foil for 2 hrs. Although the BB ribs around here can be pretty big. I did notice when I put them in the mes the temp dropped quite a bit and took a while to get back up to temp. Maybe next time I will set the temp higher to start so it doesn’t shock my smoker like it did today... I’m a big critic of my own cooking. they were very tasty and everyone loved them, just baffled how some were not coming off the bone as clean as others.

Hey Thomas the Tank. Nice looking ribs. What rub and wood did you use?

I was sitting at a high school football game Thursday night and decided - on a complete whim - to do ribs Friday. And so I did!

I tried a new rub recipe found online that included cinnamon. Family loved the rub, although I wouldn't use it often.

I used hickory and apple wood for smoke. This pic (below) is about 2.5 hrs in. Just before I wrapped in foil.

Using a new recipe, I added brown sugar, honey and some apple juice as I wrapped the ribs in foil.

And here's the final product. I set the ribs in the cooler to rest for about 45 minutes. I really think the foil wrapping helped with the added items. (juice, honey, sugar).

Those were some tasty looking ribs. That was a wonderful gesture on your part. I’m pretty sure there were some very satisfied teachers at your place. Great job. Thumbs up.

The rub I used was something I made myself with a lot of different seasonings. I tried several different mixes out and settled in one I liked.

I used a mix of cherry and hickory wood. Which is what I mostly used, since it’s chips I went 2 handfuls of Cherry to one handful of hickory and mixed it in a ziplock bag.

Nice looking ribs on your part!
