Yep - I've been anxiously waiting to see the end result!  It's been very cool watching this come together - awesome job guys!!  Now we just need to see the beast in action!!

Stay tuned for the inaugural/test run smoke off! I'm picking up some butts and ribs (Dang ribs are kinda $... $6.99/lb) tonight to smoke tomorrow afternoon so I'll be sure to take lots of picks and post them throughout the day. Going to be using charcoal for the first time, any advice? I wont be using lighter fluid to start it and I do have a chimney starter. I was planning on starting it like a normal fire but with some charcoal on top. How many bags do you think I will need for a 8-9 hour smoke? If I get extra it wont hurt since we will need them for the wedding next weekend.

Thanks guys!

Nice build!

$6.99/lb ?!? What are they from, special organic pigs raised in Japan?

Try making nice with a GI - I get ribs for $1.84/lb for spares or $2.83/lb for St. Louis from the commissary. Doesn't Wally World/Sam's have 'em cheap?

I sure wish I had your welding skills and resources. I'd have to pay new prices for materials.

I am very fortunate to live near Maker Works in Ann Arbor, MI They have all kinds of tools available to 'makers' - which includes welding equipment!

What a great concept!

My current project is to build 'real burners' using 'real stainless steel' to fix my old Weber Gas Grill.

Using their CNC milling machine - I can program it to drill (118) - .045 holes on .123 centers in about 15 min. per burner ;-)

Look for/or start something like this in your neighborhood!

She's finally home (actually shes been home for a few hours)! The butts still had the skin and back fat on so I removed them since I wasnt sure if I was supposed to leave them on or not. Rubbed them down with mustard then cororumrex's dry rub. Starting the charcoal went very smoothly by using the Weber chimney starter. CHARCOAL IS AMAZING (except when you drop a hot coal onto your trailer turn signal)! It holds temp so much easier then wood. Internal temp has held pretty constant at 250 deg. Butt temp is at 172 deg currently.Butts and ribs were put in a little before 12pm. I'm going out soon to spray it all down with some apple cider vinegar. I will pull the butt out when it reaches 185 and the ribs when they start to fall apart. Got some new welding gloves for handling the hot smoker. Cooked a few dogs on the grill. Will post more pics when everything's done.

awesome build !   did you get the screen for your grate and coal box local or order it in?

my steel supplier says all he can get is expanded metal {i guess it wouldnt matter, just curious}

Here's the rest of the Qview from the first smoke. I definetly overcooked the ribs but they were still edible and the butts were a tad dry but still good. My mistake was thinking I didnt need to wrap them like I dont need to in the small electric smoker. Lesson learned. Enjoy!

I always cook with wood and never wrap, but you do need to be very careful managing your temp. Nothing like electric-set it and forget it. The all nighters are tough also when your cooking with wood unless you have a good helper you can depend on to keep temps right while you take turns snoozing.

I've got one of those all nighters comming up the 13th of July. Cooking 300lbs of butts.

It's getting exciting!!! Just made up 2 gallons of BBQ sauce and mixed up my rub.
Thanks for all the feedback and encouragement. Unfortunately I did not not get to help with the build a whole lot. But my strengths are in the recipes :)

:yahoo:

Stay tuned...
