Havent been on here much lately but I had several Boston butt left over from a catering order I did and decided to have a little fun with it see what comes of it. I am doing barbacoa style pork. Obviously not entirely traditional but I'm going to smoke until about 160 pull them off and then braise them for several hours at 300°. Then on some corn tortillas with some fresh pico and queso fresca. Will update with finished pics later.View attachment 497715
Here is the finished product on the barbacoa style pork tacos. Topped with queso fresco and fresh made pico. This may well be the best thing I've ever made. Forgot to get a pic of it while braising.
