Banana Pancakes

This morning we made banana pancakes. Super simple to make and tasty. Sorry no photos.

2 eggs
1 banana
Nutmeg to taste
Cinnamon to taste
1/4 teaspoon Baking powder (optional)

For two people double this.

Make small pancakes ( wide mouth mason jar size. 3” otherwise they are too hard to flip.

Cooked on the Blackstone 22”. Lightly sprayed with Pam.
 
Did you have any trouble getting the banana mixed with the egg? I ended up using my immersion blender. Lol. These are pretty darn good pancakes. Ive made them a few times but not tried adding the baking powder. I'll try that next time!

Not really we've always just hand mixed. We leave them pretty chunky. We do add the baking powder supposed to fluff them up but I'm not sure that it does. They still come out pretty thin.

I'll try our food processor or immersion blender next batch just for fun.
