Ballistic Chicken on the PBC

Have been reading posts on many sites about Ballistic BBQ's Ballistic Chicken and decided to give it a try.
Ballistic chicken is done on the Pit Barrel Cooker and while it looks like fried chicken it is not, I was a bit skeptical, but decided to give it a try.

Corn Starch, then club soda and then flour, panko, baking powder, Salt, Pepper, Paprika, Garlic Powder, and some of my General use Rub.

Ready for the Pit Barrel

Pit Barrel set to a temp of 360, with Cherry Chunks and B&B Briquettes

About 30 minutes in

Finished the thighs at a IT of 175
Dusted with some of Kosmo's Dirty Bird rub

Plated with some corn and cucumber dill salad.

All in all, I was surprised at how good this was and how close to fried chicken, but with a great smoke flavor that did not over power. The whole family loved it and we will be doing this again!

That chicken looks outstanding. Was it juicy inside.

It was super moist. I was hesitant about cooking it up to an IT of 175, but juices ran down our hands as we ate it.

Thank you! The Dirty Bird is the only commercially produced rub I use, the rest are my own, I just can come close to Dirty Bird!
