baffling plate chargriller help

Ok i posted a pic of someone elses mods .My question is why take your baffle down and then at an angle over the tuning plate (as seen in photo)..could i just take a piece of flashing and mount it to the side and meet it at the tuning plate or just  a hair below it to push the smoke up and under my tuning plates...Trying to figure out the best way thanks guys

The tuning plates even out the heat not just directing the smoke

Right, So does it make a difference if i went str8 down with my baffle rather than at an angle
