Sunday cook, decided it had been too long since my last rib cook so I picked up a package of Baby Backs. My last cook in September was a disaster, I did a 3-2-1 and they were falling off the bone.......literally. Great taste but so tender they fell off the bone.
So this time decided I’d try a 2-2-1. Prepared the ribs by salting and then using honey as my binder and an all purpose rub from Spiceology .
Threw it on the pellet smoker using hickory pellets @ 225* for an hour then spritzed with Apple cider vinegar, out of Apple juice. Ran another hour before wrapping with butter and brown sugar. Two more hours then removed from wrap, spritzed again then another hour.
Removed and wrapped for a 20 minute rest period before cutting a consuming...... and consume we did 😎
Very happy with the results, no leftovers for lunch!

Ribs look great nice job! And yeah Jake is right. Try the 2-2-1 next time you do BB's. When using foil I usually reduce the foil time due to the FOTB aspect of it. 195 between the bones will get you tender but bite through and 200+ will be FOTB.
 
Beautiful coloring. Thanks for posting. You saved me a potential train wreck as well. Heading tomorrow for a food run, and picking up a couple packs of 3 slabs of baby back ribs. for me BB's are a no wrap sitch. Just rub, smoke, eat!

Thanks for the kind comments and advice. I’ve already picked up new knowledge and will be applying it in the coming months. BBQing and smoking has become a passion for me since retirement. I have lots of time to enjoy the experience. 😎
