My hunting buddy is not into smoking meat however, he and his wife are into my ribs. A few times a year I gift them with a couple of racks of BB. They prefer BB over Saint Louis. My 5# order of Malcolm Reed's THE BBQ RUB came in. I have been out for a few weeks. Rubbed em down and let em sit for about an hour while I got the Weber Kettle up and running. I again used the modified minion with 100 or so unlit RO briquettes and 8 lit briquettes and apple wood. Bottom vent, 1/4 open and top vent about 1/4 open to start. I never touch the bottom vent after it's set. I move the top vent a few times during the smoke if needed. It ran at my desired temp for 6 hours with very little fiddling with the top vent at all. With how I loaded the charcoal it would have gone for 10 to 12 hours easy. Spritzed with apple juice every hour for the first 2 hours. Hour 3 poured a can of Root Beer over the racks. Hour 4 basted thick with Tiger sauce. Hour 5 basted with butter, sprinkled with brown sugar and pour on honey. The 6th hour slid the tongs under the racks and they tried to split in the middle. They were done and pulled em. I did not wrap the ribs. I did not slice the ribs. I vac packed and my buddy will pick em up today. Happy New Year!!

Nice work Hawg. Love the use of the sharpie! That’s the proof of a time tested technique!

Those are some good looking BB's!
I go thru the whole case trying to find the ones I like.
Sometimes they are just not there & I buy something else, but when thy are there I buy all that I can get in the cart!!!

Damn good looking ribs Tony! Do you get any of the root beer flavor on them? Never thought of doing that
Not really. It's what I had on hand. You can use Dr. Pepper, Coke, Pepsi Cola or whatever you have. It just adds moisture a little sweetness and helps with the bark as well. Doing some today with no added flavor layers at all with the exception of spritzing every hour with apple juice. bmudd exchanged with me. I have his personal rub as well as Kinder's BBQ sauce he sent. I have one rack with bmudd's ((Brian's) rub and the other rack with Killer Hogs rub. Nothing will be added for additional flavors but the Kinder's sauce at the end. By the way, I tasted the Kinder's. It's amazing stuff. I will post pics later today.

Thanks Al. I'm with you. My wife always laughs at me because I'm like an old lady picking through the meat to find the perfect racks.
