If those are baby backs you are going to want to use a 2-2-1 instead of 3-2-1.

All done, I'm vacuum sealing and raffling them and a shoulder off for a fundraiser .....
I just hope who ever wins enjoys!

Well 2 of the 3 racks made it.... The third well I could not resist! Amazing !!!!!
I used a Chipotle rub/seasoning ... Weber makes it, I picked it up at SAMs.
