So I've got two racks of baby backs prepped but unsmoked...
How long will they keep in the fridge?
Heres a bit more info.
They went from freezer to fridge to thaw late Wednesday evening...
Friday afternoon I opened them, stripped the membrane, lightly pre salted them, wrapped them and back in the fridge...
They were out 10 minutes total and have been refrigerated at about 34° since.

Wouldn’t go more than a week or so. Even if they’re safe to eat after that, they’ll taste like everything else in the fridge.
Thanks...I , Just spent two days straight doing about a 70 pound assortment of brisket, butts and ribs plus two fattys and 10 dozen ABTs for our annual independance day BBQ and need a breather...lol...
I'd smoke em now but waiting till Friday would t hurt my feelings any.
