Put these on pretty late at 7:30, swift ribs. Smoking with alder at 250. And using my new tool to balance these quarters. It's not easy. This is called a weldors third hand. This one has railroad parts

They turned out super good!! I actually got to tired and left the ribs ok the smoker till 10 am. They were about 188 it at 11:30 am and wanted them to go another hour but didn't wanna stay up so I left them in and set my alarm for 3:30. Didn't fell like getting up lol. My smoker stays warm long time even after fire is out tho. They were really good tho. I think the slow cool down worked really good because they were some of the
