 OK !  I got a idea , the other day I was asked by some family "what do ya think is the best thing ya smoke ? "

So I got to thinking  , I love all Q and enjoy smoking everything .......So what is MY favorite thing I smoke ?     What is the best tasting thing I would do for MYSELF ?

How about all ya posting or tell me what ya think is YOUR SIGNATURE SMOKE?

Here is mine , (I posted this a few months back) , just made it again for the third time and shared it everyone loved .............

  I got a beauty London Broil the other day , big one looked like a football  ....

I  took the coffee grinder put in Garlic salt, Onion  powder , cracked pepper and a touch a salt ground it up as fine as baby powder , then I rubbed the broil with Worcester  and then the fine powdery mix ... placed it in sealed large plastic bag for 24 hours

Fired up the grill ( as hot as I could get it )  Dropped the broil on each side for 2 mins.

Then I popped it into the smoker at 220, for almost 3.5 hours .......removed it at IT 135

wrapped it in foil .  

The next day (lunch time )  took it out and MAN it was nice and rare juicy as heck !

The unbelievable thing to me    was not only was it great tasty and tender as heck ..........

That hunk a meat ....stayed juicy  for 5 days ! each time I took it outta the fridge to slice it up to eat ....the juice ran like crazy !    NEVER have I made a London Broil that stayed that juicy and pink , of course Never have I smoked one

SO Guys and Gals ........Lets hear it ?    WHAT is YOUR Signature Smoke , What is YOUR Favorite thing ya smoke .........
 
My signature would be a TriTip, I like it even better than prime rib
 
I would have to say Ribs or Butt...However; I got some Ideas in the works that will be tested and saved for Throwdowns...Heheheheh

The sausage in general, andouille specifically gets the most happiness outa me.

Prolly making it makes me as happy as eating it.

Being completely new to the smoking game, I don't have a signature meat just yet. But the two biggest reasons for me t oget into this was pork spare ribs and pork shoulder. I completely love hot and spicy food so have some good ideas for hot spice rubs and sauces. Currently am having trouble even getting my smoker to get hot enough to cook (another thread), but once I figure this out, I'll be trying a variety of meets.

My Briskets have been really great here lately. If you happen to ask the folks up north they might say the turkeys fried and smoked. They went crazy again this past thanksgiving.
 
Mine would certainly be the brisket which, oddly enough, was the bane of my existence for some time!
