Looking to buy an ash bucket for my offset smoker. Should I go with galvanized or hot dipped galvanized?

No, I bought a used smoker. It has a rectangular fire box. I will use a pan like you suggest to see how that goes.I answered this on Facebook yesterday. I'm still not understanding why you need a bucket.
I use an old aluminum pan. My smoker has an ash dump. Did you get a Bell Fab? I empty the ashes into the pan and throw them in a bag and in ti the garbage.

hot dipped galv and galv are the same thing... All galv is hot dipped except touch ups sprays. which really isn't galvanizing.
Yeah, that's zinc electro-plated, similar to galv in the sense it uses zinc but not dipped or typically called galvanized.DC current applied to the zinc bath becomes zinc plated ?
Thinner and smoother . I think that's how they do the metal studs we used for framing commercial buildings .
