Have a new, seasoned Masterbuilt electric smoker and ready to break it in. I've selected an arm roast, a dry rub of paprika, black pepper, salt, mustard seed, nutmeg, garlic, allspice, sugar, ginger, thyme, sage, red pepper, cinnamon, and vanilla bean. The only thing I'm stuck on is the wood selection. My wife doesn't like a strong smoke flavor but I want to know its been smoked. I was thinking Pecan but wasn't sure if there was a better option. The meat is still thawing in the fridge so I have time to get some input.
