That's the way my momma always does them. Twice fried for goodness! She's originally from Germany and calls it something else though. But in any language, the results are delicious!

There are things I like at applebees.

Oddly I actually like their sauceless dry rub ribs ( don't recall the actual name of them ). Not a fan of any of the other ones they have though. Been several years since I ate them though.
 
There are a few things I like there, though I have to say I end up with a burger a lot of times (the Brewtus burger is pretty darn good). My wife likes Applebee's so we're there a handful of times a year (maybe 10). Their Bourbon Street Steak used to be awesome, but either they changed the way they do it, or I developed a more discerning palate. Probably a combination.
 
Also, for Fries, my wife makes some great ones. We have a deep fryer, but she refuses to use it (or let me) any more...something about my sky-high cholesterol, and not wanting me to die - why do broads have to be so unreasonable?

What she does is put the fries in a ziplock with EVOO, cayenne, and paprika, and makes sure she gets them all covered real proper-like. Then puts them under the broiler for I don't know how long, and they come out delicious. They don't taste fried, really, but pretty dang close if you ask me, and the paprika and cayenne is awesome. I usually add some salt and pepper at the table, and I'm good to go!
 
i think i'm going to your guys way of double frying. I've never done the first frying at a low temp. But i've double fry'd/blanched/frozen trying to get the perfect fry...
 
I want to correct this folks....must have had one of them brain farts or somethin...first fry should be 325-330 degrees...NOT 340

Sorry if I misled anybody.
