I have a bunch of Apple wood that was cut down about a year ago and has sat in my fairly warm and insulated garage since.

It's very dry at this point and great for smoking. I only use the wood for making chunks, so I bandsaw sections of the rounds as I need them.

Question is: I have so many rounds that are dried out already and its going to take me years to get through it all; are they going to get too dry in another 4 or 5+ years of sitting in my garage for good smoke flavor? Should I move some outside and cover with a tarp to keep some moisture in the wood? Is this even a non-issue and I'm over thinking it?

Yup. I keep wood chunks for years with no problem. Just cut up a huge pear tree that I will have for 5 years or so for smoking wood. I cut all my own wood from the farm.

I'm in Florida & I keep my wood in an aluminum shed. It will last for years without any mold & it is nice & dry for smoking. I do the same as you and cut biscuits off the splits that i use in my WSM & SM24, although I use a 12" chop saw. I use the full splits in my Lang, but honestly I use the SV more than any of my other smokers. It's just too easy & gives a really good flavor to the meat. Maybe as the weather turns cooler down here I will use the Lang more often.
