Anyone out there every make Turkey Pastrami

Looking to try an make some Turkey Pastrami from a couple turkey breasts. Anyone out there have any advice?

It's very easy and makes some tasty sandwich meat.  That link posted above was my first try at it and I was happy with it.  Even my wife who is very picky about most things that come off the smoker really enjoyed it.
