I get a pig every year and love there bacon. Great smokey flavoring, but seems like it only makes it about 5-6 months before its all gone.

I would love to just be able to buy some cheap already sliced bacon and cold smoke it for a couple hours then use that the next day or vacuum seal it and freeze it for later.

Anyone ever tried this and what were your results?

Yes I have. It is not quite as good as homemade, but better than store bought as is. I think thick sliced works better than thin, IMHO.

My butcher makes great apple smoked bacon. So maybe try a local butcher.
If your going to cold smoke bacon you will probably need more than a couple hours of smoke.
I cold smoke my bacon for 6-8 hours with apple pellets.

$3.69 lb. Been simple so far. Curing now.

I you smoke Store bought bacon usually store bought comes already cured with nitrates so can it be safely cold smoked or do you need to do additional curing to make it safe? Thanks.

I appreciate the replies! While I would love to do my own, I am currently working out of the country and have very very limited time at home over the next 2 months or so. I would like some flavorful bacon next time I'm in town for a week. Maybe next fall I will be around more and have time to try my own.
