Been awhile since I posted anything but here goes.
Got a stick burner and does well for me. Got a ECB to help with long overnight cooks but mainly use it as a holding oven after finished smoking 155F or so. What I have been doing is smoking to wee hours of morning then wrapping and hold for few hours in ECB.
Thinking of making one of these after seeing one on another thread. Screenshot_20190322-073636_Chrome.jpg

The way I'm thinking, is using it for butts and briskets charcoal with wood chunks. Put meat on late evening then take off when finish next day. Need experianced advice on how to light (top or bottom), how many rows or is there an optimal number of how many briquettes high. Etc. Any input appreciated.
