Another Turkey in the smoker... Soup is on ....

Since the forum was down, and I was needing some reassurance about smoked meats, I just had to smoke this turkey... Darn good eating too.... I trussed it to help with getting it in the bag and to create a bird that "should" cook evenly... After the smoke, I cranked the heat up to max, 275-300 ish, and it crisped up the skin... and finished the cooking cycle to get the bird up to 170-175 ish... Legs were flexible.. Joints were cooked.. And then I ate it... Pitmasters Choice pellets, from Todd at AMAZIN Products, did the job nicely.. Mild, good flavored smoke... The mailbox mod and flex aluminum ducting along with the air holes in the MB door seem to eliminate the creosote flavor... The bird was "enhanced" and dripped a lot.. I wish they didn't sell enhanced birds so I could do my personal injection and flavors...
It was good but could have been better IMO....

Looks good . I drilled 3 holes in my mailbox door ( after talking to you ) works awesome . Nice and clean .
Nice job on the bird .

Thanks for the compliment... Yeah, about the 3 holes.. I've tried blocking them one at a time and I think that screws up the clean smoke... 3 holes seem to do a nice job.... for me anyway....

Great looking bird Dave..... I will be smoking soon. I had to replace my chamber temp probe in my smoker. somehow when I did my control panel got screwed up So It is in now just going to pick it up tonight and finally get smoking again.....
 
dave, i thought it was interesting where you started you pellets in the amazin. does that work better starting them in the center row??
 
In my maze, the center row is wider and holds more pellets, so I thought I would try it.. Basically just "being different"...

I just ate the last wing for lunch... I have the breasts vac packed in the freezer for sammies... I have the carcass in the refer for turkey soup... This thread may be forgotten by the time I make soup and sammies... Sooooooo, here's some pics from the internet... Sorry Bear... That's about all I can do for now.... Dave
