Just picked up my 30" MES today and am looking to start smoking next weekend. Have been lurking for a couple weeks, so also already have my A-Maze-N sawdust smoker package. I'm not sure what to start with for meat. I love brisket, sausage, ribs and beef/chicken kabobs. Any suggestions for beginners and I'm all ears!
