Hello everyone. Figured I should stop creeping around and finally introduce myself. My name’s Joe. As you may have guessed from my name I was a door gunner in the Marine Corps (2005-2010). Loved my job, but managed to accumulate a wife and a few kids so it was time to hang it up. Found a job with Boeing up in Everett, WA, and started going back to school for mechanical engineering. Finished up the degree and moved to an engineering job with Boeing back in my hometown of St. Louis. Been back here for a couple months, living in O’Fallon, MO, and the weather is a nice change from that up in the Seattle area. Much more conducive to smoking meat!
Got myself an 18.5” WSM as a sort of housewarming gift to myself, and have been firing it up just about every weekend. So far I’ve done ribs a couple times a sirloin tip roast, and a breakfast fatty. So far everything has come out excellent, due mostly to the things I’ve read on this forum.
Anyway, just figured I’d say hi while I wait for the bullet to stabilize out after throwing 16lbs of pork butt on it. Shooting for it to mellow out around 250, then I’ll be off to bed. I’ll start a separate post on the pork butts, probably tomorrow.
