I put 2 10 lb Boston butts in my pellet smoker at 5:00 pm at 225. At 9:00 the fire was still going but when I woke up at 1:00 to check the fire was out and had been long enough to cool down. Got it going again in about 20 minutes. Temp is in the 80s outside. Am I safe to resume? Butts are bone in and not injected. Just a single probe inserted.

What did they temp at 9 when you checked them, and at 1 when you noticed smoker was off?

They were in the 120s when I checked them at 1. I think they were in the 140s at 9 the last time I checked them

If you don't have any more temp data than that, then toss it all out.
You lost $50, but that money won't go far toward doctor bills if you or multiple people get sick.

They are fine... you had them to 140 and had only cooled to 120.
But do yourself a favor and get a therm with at least 2 probes... one for smoker temp and one for meat temps. Also make sure you can program the hi / low alarms.

Yup, you're fine. Here again we read yet another overnight smoker without a safety net to ensure they are awaken via an alarm that the grate temps have dropped.

PLEASE PLEASE folks, get the necessary digital probes to monitor grate and meat IT that will sound an obnoxious alarm on your phone bedside. Without it you are playing Russian Roulette and will get bit!

You're completely safe. The butts are considored intact and the exterior was well above the the 140 mark.

Give this thread a look. If you have any doubts.
