Hey all just got a smoker on Black Friday Got an MES 30" with a window. I have already ordered, received and am using an AMPS in a mailbox mod. I did ribs last weekend 2-2-1 method baby back using alder chips and it came out awesome. Sadly no pics as my wife and I could not wait. I have a chicken brining for a smoke Sunday and am going to be doing a Boston butt at the same time. I currently have Colby jack, Monterey Jack, pepper jack, mozzarella, extra sharp cheddar, and cream cheese going in a cold smoke right now. :yahoo: I love smoked foods I am addicted. Pics will come after I get home from deer hunting tomorrow. I hope to learn and contribute when I can.
