Another Goodwill Find " Ravioli maker " and books

When I have time as there are a few different ones around, I try to drop in.

Well couple weeks ago I was looking for for something and I thought I would check out the thrift shops.

Did not find what I was looking for , But did find couple cook books and this
I always wanted one but was not sure if and when I would use it . But for
$ 2.99, I made it mine .

So now it has the dough recipe on the back of the box and how to use it .

I have a couple ideas of what to fill them with.

Thinking maybe Smoke a brined chicken for the stuffing or maybe Donair meat Ravioli and our version of Tzatziki sauce over that .

So another good score at the thrift shop for me.

So many ideas in my head for a filling.. and could go sweet or savory!

Might be a fun way to use up any left over smoked meats!

Take some puffed pastry dough an fill with a bit of pie filling, deep fry an then dust with powder sugar. Fried pie bites...

Yes many things can be done with them, and I will post for sure.

They work pretty good, as do the wooden ravioli rollers.
Lately I've been going old school and free forming them and using a pastry cutter, it's quicker and easier for me .
Next time I make them I'll be sure to take some pics. Morels and ground veal, garlic, and chopped dego parsley is my go to for filling, but I also do plain'ol ricotta thinned down with eggs , pecorino cheese ravioli as well.
The cheese ravioli is also amazing with ground wild duck or speckle belly goose in the filling as well.
Yum this is normally a winter meal for my house, but you peeked my interest.
Im gonna have to make some soon.

I always wanted to make my own , but never had the tools , or made the time to do them.
Same as perogies, just easyer to buy them done, but fresh is always better.

Yours sound tasty , and I am leaning towards smoked chicken iin them to start , or maybe Donair meat.....my god I cant make up my mind, lol

I have that exact one . Have another one that Ray sent me . Both work great .
Do you have a pasta roller ?
You already make pasta dough ?
I have several recipes for dough , and they can be all over the place .
This is an easy one to double / triple or what ever .
1 cup AP flour ( I use 1/2 AP - 1/2 Semolina )
1/2 tsp salt
1 egg
2 TBL water if needed .
If you haven't made a lot of pasta dough , don't be worried about what it is , but understand what it will be .

Start simple and use ricotta cheese . I think that spinach and egg in the cheese .

I've had the exact same one for a LONG time. Still new in the box and have never used it, but I keep saying one day...😉

Yes at that price I could not pass up. And always a couple good books to read ( cook, BBQ, food,)
I am about the same once in a while unless I am looking for something special, then I make the rounds to a bunch of them.

- I have made pasta dough before but quite awhile ago, but there is a recipe on the box, not sure if it is a good one.
Willing to try a tried and good one from you.

Was hoping I could just us my rolling pins to flatten after I mix kneed and let rise some. Before you or @Steve H hook me into a pasta machine, LOL.

Your dough looks great and the finished ravioli looks good also.

there is a recipe on the box, not sure if it is a good one.
It's really about the same as the one I listed . Basic rule of thumb that I've seen is 1 egg per 1 cup of flour .
Some do 1 egg per cup , then 1 yolk per the total batch .
So 2 cups flour , 2 whole eggs plus 1 yolk .
I've also done all semolina and just water .
I do the 1 egg per cup because it's easy to double / triple ,, whatever .
If you have one you;ve worked with , I would use that .
