This past weekend, I broke in my new mini-WSM. I decided that a fattie was the way to go.
I went with ground beef instead of sausage. I used the steps in the fattie sticky to build it. Sorry I don't have any rolling pictures, I didn't think to take them. One is spinach, provolone and mozzarella. The other is spinach, sharp cheddar, sauteed onions and garlic and mozzarella. I was very happy with my bacon weave, it looked great.
As much as it pains me to say this, but I will go with less bacon next time. We tasted nothing but bacon. While that's not normally a bad thing, I wanted to taste the rest of the ingredients. Maybe if I use sausage it would have been different. I'll either use a bacon wrap that has bigger gaps, or just wrap the bacon around it.
But we will do this again. I kept the temp around 225F and cooked these for about 2 - 2.5 hours. I used hickory and apple chunks.
