Since I just made a batch of andouille and my wife wanted homemade sushi for supper I decided I would try some with our usual ingredients with the addition of some of the smoked sausage. I sliced some sausage into strips and pan fried just to brown up. We make a krab mix by processing the krab and adding mayo and sriracha sauce. The only other thing we use is some sliced avocado usually. We top it off with some more of the spicy mayo and panko then dip in soy sauce.

She spreads the rice on the nori

Then I load it up and roll it


Then the kids pick off all the loose rice and hand them back to her. With 3 mats it's a nonstop circle.

Once they're all rolled up I slice them and she plates them.


We have been doing this a while and have it down to a routine.

That's something new to the sausage forum...... looks great but if i'm eatin fish. its commin out of the frying pan..LOL

I used to think that... Now the only way I really like my tuna steaks are rare and I am totally down with the tuna sushi rolls man... MMMMMMMM...
 
Great Idea...I definitely eat more Raw Fish than Cooked. We are some huge fans of Sashimi ( Raw Fish ) and Sushi ( Seasoned Rice with Raw or Cooked Fish). Raw Scallops and Tuna are by far my Fav. If the full crew get's together, we Cook off 4 cups of Rice and and make 12-15 Rolls...JJ

Our last big production...Spicy Tuna and California Rolls...

We make 11 rolls every time pretty much because that's how many we get out of the rice my wife cooks. I'm open to try anything once and alot more if I like it. It just so happens that raw tuna is 1 that I liked and eat alot more of.
 
Both plates of sushi belong on the cover of "Fine Cooking" or "Gourmet"  The actual making of the sushi eludes me. The one with the rice on the outside is impossible. I would need to have seven fingers on each hand to have it come out like yours. My wife can do it with minimal effort, she's kind of a smart ass like that.    OOPS...Got to go now....
