Let there be spatchcock!…and corn on the cob.

Put this on this morning, my first time making spatchcock.

First picture lighting made it look burnt, but then noticed the close up...
I'd eat that!
Did you do any direct heat cooking to cook the skin? Looks like you have it set up offset. I've never gotten good skin on my offset.

Not burnt at all. I didn’t do anything to the skin ahead of time. Just slathered mustard and a blend of seasoning. I couldn’t decide if I wanted to sear it ahead of time, and ended up not. I added some homemade sweet bbq sauce about an hour before it was done and the skin was great! And yes, it is an offset.
