So as not to waste a bunch of meat, would doing a test run on 1 lb of meat for jerky suffice.

Just keep in mind you're going to yield 25% jerky compared to raw meat weight.

So that pound is going to net you [double checks Canuck math...] 4oz of jerky.

Definitely enough to sample if you're wary. Smallest test batch I like to do is 2lb, so then I have enough for a couple second opinions as well. If it's just you tasting, not as big a deal. Also if it turns out tasty, 2lb doesn't seem like a waste of time
