Damn I forgot about these. Going to have to make a small batch. Wife and son won't eat them but love pickled eggs. Go figure
 
Its been awhile since I have made these. Time to fix that. I been stuck on those beet deviled eggs. I love those things!
 
Once upon a time, my local watering hole hosted a pickled egg contest. The only rules were there had to be at least one dozen, and the full recipe had to be printed and stay with each container. I recall there were about 12 entries, some as simple as hard boiling a dozen eggs, adding vinegar, water, a jar of jalapenos, and some hot sauce.... to others that had all kinds of seasonings and flavorings. One even used beet juice to make the egg white turn blue.
 
The wife and I both enjoy pickled eggs, but we've never attempted to make them. Those sure do look good.
