Amazing Pork Shoulder

Last night I made pork shoulder for the first time on my Traeger. I also used a smoke tube for the first time. This is a 10-pound pork shoulder. The total cook time was about 5 1/2 hours at 325. I bumped it up a little bit at the end.

I used Mad Hunky rub and let it rip for 2 1/2 hours before removing it and rolling it around in my special sauce. I also added a few slices of butter on the top, sprinkled a bit of brown sugar before placing in an aluminum pan, wrapping it, and letting it go for an additional 2 1/2 hours.

Good morning and thank you.

For this, I decided to slice it instead. I kinda chunk'd it off the bones and let my wife and kids just tear into - me too! I made some sauce to offset some of the spice in case some folks couldn't take the heat, which really was not bad at all. I try to have a good balance between heat and sweetness.

Here is what's so great about this addictive hobby that we all love. The recipe I used for the sauce I coat the meat with prior to the second cook, includes an amber ale. I buy it from my local distributor. After dinner, I made him and his wife a plate, along with some sauce of course, and dropped it off at his place. I love to share my cooks with folks and get some truly unbiased feedback.

My philosophy about barbecue; food, in general, is this:
I a HUGE believer in sharing anything I make, including any recipes, methods, techniques, ideas, tips, articles, websites, deals, etc. I'm Italian, so food is a very big part of my life. Obviosuly I cannot share the food, per se, but I can share everything associated with it.

But here my wife's family has that same view , they love to just show up at supper time on the weekends
and share our foods , lol as they know I am cooking/smoking something.

I have no problem with that as I love feeding them. Just wish I knew ahead of time how many were coming. LOL

I always do too much anyways
