alligator boudin

Purchased some nice alligator boudin, and smoked them along with some armadillo eggs, and boar yesterday. the boudin was excellent, lots of flavor, and nice texture. 2 hours @ 235.

Never had alligator boudin, every other kind. Looks good

Boudin in any form is good, alligator, crocodile or wombat. Good to go!

it was a tough choice alligator, or crawfish... next time well give crawfish a try.
