Just started a couple of 7 lb pork butts around 4 this afternoon for tomorrow's 4th BBQ. Used Jeff's rub on the butts and smoking with apple wood. Spritzing with apple juice/rum. In the morning around 7 or 8 I'm going to add 2 chuckies switch to oak or hickory if the butts are foiled by then - and then around 10 I have 4 racks of baby backs to put in. Gonna let the chuckies marinade overnight. Also have 4 chickens to do beer can chicken on the grill.  Will also be doing some homemade baked beans using my bean pot and potato salad, collard greens, and slaw. Will post q-view as we move along.

Now at about 6 hours and holding at 145 and 150. Hope to foil before it gets to late but we'll see! Have the chuckies marinating and ribs ready to go for the morning. Made the slaw and potato salad too!

Chuckies about an hour in - pork butts are now at about 185-190 at 16 hours.  Beans are in the bean pot and baking. Just need to put the ribs on around 10 and the beer can chix around noon-12:30.

Everyone though I was nuts....except for our Ridgeback - he stayed in the tent with me! He's pretty relaxed as you can tell.

It's 7 am and the chuckie's are going to go in the smoker in about half an hour - just came out of the fridge. The butts were foiled at around 4 am and are now both sitting at 180* - will it be OK to hold the butts in a cooler for 6-7 hours or should I pull them after an hour or 2 rest and put them in a slow cooker on warm or low?

6 or 7 hours in a cooler might be pressing it a bit. I would opt for an oven on low or pull it and then reheat as needed.

Thanks Flash - they are at 195 now and it's 11 am - I think it may only be around 3-4 hours in the cooler now since I would like to have them reach 200 - that's the temp they reached last time and they pulled real easy and were really good.  I figure when the beans are done I could so as you suggest and put the oven on low (say 200) and keep anything in there covered that needs to stay warm. Probably will east around 4 or so.
 
that all look good and sounds like you had fun.  On the thermometers you have in there, if you clean them with white vinegar the smoke will come off the face
