Had no clue where to put this.......Ernestina just made this for dinner today..:yahoo:..it is a good soul warming winter food....

Ernestina's Albondigas Recipe
1 lb of ground beef
4stalks of celery, diced and chopped (2 diced 2 chopped)
1/2 onion chopped
1/2 tomato chopped
1/2 bunch of cilantro chopped
1 cup of rice
1 can of Pato sauce
1 egg
carrots as much as you like, baby carrots or sliced
oregano season
salt and pepper

in a large pot, boil about 4 quarts of water. add about a half of cup of rice and some of the baby carrots, and about 2 stalks of chopped celery to the pot. in a large mixing bowl, add the ground beef, diced celery, cilantro, tomato, onion, rice, season with salt and pepper and oregano, add the egg and mix. roll the mixture into meatballs, you can make them big or small. add to the boiled water, and add the can of pato sauce. this will all begin to boil, and foam with begin to form on the top of the water, remove as much of the foam and discard. let the mixture simmer for about 20 minutes until the ground beef has browned and is cooked thru. then enjoy, it might be spicy for some and others it may not be.

pato sauce is found in the mexican aisle in most grocery stores. its in a yellow can with a duck on it. you can substitute tomato sauce, but the flavor will be pretty boring

El Pato! One side of the can says Mexican style tomato sauce, and the other side says Salsa de chile fresco. It's definitely worth trying if you have any interest in moderate heat.

Ever notice that there is often a broad swing in heat level from can to can?
