adjusting thermometer after calibrating?

After calibrating meat thermometers do u simply make a mental note to add/subtract when actually smoking with the thermometer?  Do some thermometers allow you to adjust them after calibration.  (i use the maverick et-7 and et-73)
 
some are able to be calibrated. If yours isnt then just keep a mental note

I started a file for all the manuals - when I first buy a product I download the PDF and stick it in the folder and never have to search for the dang paper one again
Your idea of putting product manuals in a folder sounds like a possible Wiki... hint. Good organizational skills. It's all good my friend.
