Pork loin. My Kroger sometimes has "pork roast" in a patriotic red-white-and-blue net (hey, $1.49/lb)


It's actually two, sometimes three, scrappy pieces


into a brine seasoned with sage and seasoned pepper - no sugar for me


The Masterbuilt is ready and ... oh wait, scroll past this


Into the smoke, lump charcoal and hickory chunks, temps around 225F


The finished product - still scrappy pieces, but great for slicing


Life is good when you wake up in the morning and your hands still smell like smoke.
 
Looks good and I'll bet tasted even better
