I cured a 2# pork belly 14 days and rinsed it put it in the refrigerator to get ready for smoking, but I decided to rub the smoke flavor on and see how it comes out, what do y'all think?
 
Ok just trying to learn something here so please forgive my ignorance.
If 8 ounces is good for 100 pounds that means 0.16 ounces (4.5 grams) would be rubbed on a 2 pound pork belly to give it an artificial smoke flavor?

Forgive my ignorance, as well, I've never heard of AC Legg 127. But I'm curious as to why rub the smoke powder on and then smoke it. I'm trying to learn, too...
