Did up a butt and some ribs as well as ABTS. Thought I would try my own filling, came out pretty good. No finished pics, they didnt last.

1 pack cream cheese
1/4 of an onion finely diced
10 to 14 lil smokies finely diced, yes I diced em.
1/4 cup pepperjack cheese, shredded

Mix all, fill and wrap in bacon.
2 hours @ 225

LOOKS GOOD. ONE Q. WHATS THAT THING IN THE MIDDLE OF THE MEAT IN BACK? LOOKS LIKE A CHUNK OF WOOD WITH A ROD STICKING OUT?
