I am going to try these little dudes for the 1st time today.

I assume you slice the japs de-seed and stuff w/ cream cheese, other ingredients, wrap w/ bacon and smoke?

How long do you usually smoke em for?

Am I missing anything else?

You guys are probably getting sick of me today but the wifes napping and i'm bored, smoked ribs/ brisket yesterday.

Thanks WD!
Not sure the wife will let me smoke for 3 more hours today(we have a 2 yr old)... I was just going to throw them on while I heated the ribs. Oh well I can do them next time.

dude.........do em like i am going to do em today.......put em in the oven.......i smoked ALL day yesterday, in prep for today......but i want the abt's fresh..........so will be doing the oven thing.......along with some of the wings i smoked yesterday, so the oven is going to be in use anyway

So you arent putting the ABT's on the smoker at all today, just getting the smoke flavor from the bacon?

tell you the truth..........i have done abts now for several months........and this will be sacrilegious to say........but i have YET to get much smoky flavor from doing in the smoker..........so i will pre-fry my bacon like always......not ALL the way cooked, just half way........i find that putting raw bacon in the smoker on the abts.....the bacon doesn;'t really crisp up......so i just pan fry em just abit.....some even use the micro-wave for abit.........

Tex, Heres the recipe I use. Its quick and easy. Takes 30 minutes in the smoker at 300 degrees.

10 fresh Jalapenos
8 oz block cream cheese, at room temperature
1/2 C finely grated sharp cheddar
1 Tbsp dry onion
1 tsp granulated garlic
1 Tbsp honey
1 Tbsp barbecue rub
1 lb bacon, thin cut

Wearing gloves, cut jalapenos in half, remove stem, seeds, and white ribs. Mix cream cheese, grated cheddar, dry spices, rub, and honey. Fill jalapeno halves with cheese mixture, then wrap each in a slice (or half slice, if using smaller jalapenos) of bacon.

adjust vents to achieve 300*F at grate. Smoke at 300F for 30 minutes, or until bacon is golden brown. Serve and eat!
